Hi and Welcome

I’m Risa and I’m so happy you are here! It’s Risa Darling started as a way for me to document my life of great food, recipes, living as an empty nester and to introduce you to people I meet along my journey So grab a cup of coffee, tea or glass of wine and enjoy.

A little about me:

  • Yes, Risa is my real name. It’s pronounced like Lisa, but with an ‘R’

  • Professionally, I'm an experienced adult educator and training professional with a sincere passion for lifelong learning, graphic design, organizing and photography. 

  • I’m a twin and mom to three young adults.

  • Being a mother to adult children is sometimes difficult for me.

  • I love good food, paired with the perfect glass of great wine -- you can NEVER go wrong with great wine.

  • I've also picked up the hobbies of knitting and gardening in my spare time and I’m starting a really great vinyl collection; vinyl is still the only way to really enjoy good music.

A little about me

I wasn’t always fond of cooking, but after my divorce, I started exploring different types of foods, restaurants and recipes. If I’m ever in your city, you will find me at a local restaurant eating great local food and having a glass of red wine or a great local beer.

My cooking adventures led me in search of recipes that feed a single person. As you may know, cooking for one can be…..interesting. Many recipes created to serve 4 or more people. Out of frustration, I starting finding great recipes and started making ‘half’ of the recipe…..just for me. Just look under the ‘Table for One’ tab.

I love all thing black, grey and white, but a friend once told me that I need a add a ‘pop of color’ to my life. Take a look under the ‘My Home’ tab to see how I’m adding a pop of color to my home and life.

My hashtag says it all #SingleEmptyNester. I’m single and an empty nester. I love the quiet at my house, but believe me, don’t think when your children turn 18, parenting is over. They keep me on my toes and they will sometimes comes home for a little while.. I was born and raised in Austin, Texas and moved to Oklahoma City many years ago…and now I’m back in AUSTIN.
